Guideline for hiring waiters

  • For a sit down meal we suggest 1 waiter per 10 guests serving food and drinks.
  • For a buffet you we suggest 1 waiter per 10 guests serving drinks.
  • For canapés and finger food we suggest 1 waiter per 15 guests serving food and some drinks plus sufficient kitchen staff if you’ve chosen the menu, which requires chefs in the kitchen assembling food.  Please read below about bar staff.
  • Waiters don’t just serve food they also help setting up and clearing down, clearing dirty plates, glasses, and spilled food during the party.
  • Depending on the size of your party, if you are taking care of the drinks for the party, you will need one or two people in charge of the beverage to ensure there is a constant flow of drinks through out the party. The bar person(s) will also come in useful when you want to tidy all the dirty glasses guests leave behind in various spots during the party. Alternatively you may wish to use your own staff as bar staff or you might not mind if the guests occasionally help themselves with drinks while the waiters are busy.

Guideline for hiring chefs

  • You will need at least one chef for a dinner party.
  • For a small buffet (up to 30 guests) you may not need a chef on site.  If the food only needs to be kept at the right temperature and presented in a certain style at the party, the front of house manager is capable of doing the job.
  • For a medium size finger food/bowl food party at home (between 40-65 guests) please email us to discuss a menu, which doesn’t require a chef on site. Waiters may or may not be needed depending on the style of food you want for your party. Dharma Food works closely with clients to create perfect menus for every celebration. All themes can be translated into food. Culinary creativity and flexibility are something we pride ourselves on.
  • You ‘may not’ need a chef for a small canapé party (less than 30 guests), however you will need waiters and most likely some hiring. Please email us to discuss various menus, which a chef won’t be required to assemble the canapés on site.

Guideline for choosing food

  • Canapes are perfect for short receptions no more than 3 hours. Canapes do not replace a full meal. If you prefer something more substantial please opt for finger food/bowl food.
  • Finger food/bowl food is great for longer receptions. We always recommend that you have a combination of bowl food as well as finger food for your guests for long parties, especially when drinks are served.
  • Buffet is a great option if you want everybody to mingle for example a relaxed stylish wedding reception, which may last a few hours. It’s also good to combine a buffet with comfort finger food served later at a later stage if the event lasts until the early morning.
  • Sit down meal is good for formal events such as VIP dinners after private views at galleries or formal private dinner parties.

Guideline for hiring

  • Dharma Food uses Gorgeous Gourmets for our hiring. If you have a preferred supplier please let us know.  We do not add any percentage to their hire charge.
  • Please note, hiring companies charge for damaged, dirty and missing items from the hiring list.
  • You’re welcome to do your own hiring, however please email us the list.  In this way we can ensure the party goes as smooth as possible, and that all of the items we need are hired.
  • If you’re having a buffet it is wise to hire hotplates to keep warm dishes at the right temperature. For large parties such as weddings, please contact us about hiring.
  • If you’re having finger food, bowl food and canapés party, don’t forget to add the hiring cost for canapé trays, bowls for the food and other necessary equipment for the party.
  • If you would like us to take care of the flowers and simple table decorations such as candles, please let us know.
  • In order to cut cost for hiring, please let us know what you already have and can use for the party.
